Chicken Chili

1 large skinless, boneless chicken breast

1 medium onion, chopped

2 tsp chopped garlic

2 cans (15 oz each) kidney beans, drained

1 can (16 oz) diced tomatoes, not drained

1 can (4 oz) diced green chilis

1/2 cup water

1 Tbsp dried cilantro

2 tsp chili powder

1/2 tsp cumin

Cut chicken into bite sized pieces. Brown in saucepan that has been coated with non-stick spray. Add remaining ingredients. Cover and simmer 30 minutes or until chicken is tender.

Serve with fresh cornbread, on the side and crumbled up in chili. Yum!
