Banana Chocolate Chip Muffins

From Quick & Healthy Volume 2 by Brenda Ponichtera.

A variation of Banana Cake - Annabelle eats one of these muffins every day for breakfast!

1/2 white sugar

1/4 cup canola oil (or applesauce for lower fat)

2 eggs

1/4 skim milk

1 cup mashed bananas

3/4 cup unbleached flour

3/4 cup whole wheat flour

1/2 cup oat bran

2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp baking soda

1/4 tsp nutmeg

1/4 tsp salt.

1/2 cup (generous) chocolate chips (optional)

 

Heat oven to 350. Spray muffin tins with non-stick spray(do not use paper liners!). In large mixing bowl, combine sugar, oil, egg, milk and banana. In separate bowl, mix remaining ingredients except chocolate chips. Add dry ingredients to wet. Stir just until flour is moistened. Fold in choc chips. Pour into muffin tins and bake until toothpick comes out clean from center.

Regular muffin tins - 18 minutes

Mini muffin tins - 12 minutes.

1 recipe makes 12 regular muffins plus 1 tray of 12 mini muffins or 18 regular muffins.

These freeze very well! I always double batch and freeze
