Black Bean and Corn Soup

1 medium onion, chopped

2 tablespoons olive oil

1 can black beans, rinsed and drained.

1 (14) oz can chicken broth

1 (14) oz can diced tomatoes

1 "can" (about 12 ounces) water.

˝ cup white rice

1 tsp ground cumin

1 cup frozen corn.

In large saucepan, sauté onion in oil about 5 minutes. Add rest of ingredients except corn. Bring to a boil, cover and simmer about 20 minutes. Add frozen corn and heat 5 minutes more.

Serve with grated cheddar
