This recipe is too good to be true. Another one from Quick and Healthy Volume II by Brenda Ponichtera. I love her books!

Chicken Fajitas

1 lb boneless, skinless chicken breasts, cut into thin strips

4 Tbsp lime juice (approximately one lime)

1/2 tsp coriander

1 tsp chili powder

1 tsp minced garlic

1 green pepper, sliced

1 onion, sliced

8 flour tortillas (6 inch size)

salsa

Mix lime juice, coriander, chili powder and garlic in plastic bag and add chicken. Marinate chicken for several hours. Spray pan with non stick spray and stir fry veggies for a few minutes. Add chicken and stir fry until chicken is done, several minutes more. Add more cooking spray if needed to prevent sticking. Serve on flour tortillas with salsa.

Tip - This recipe makes a mess of the pan. I fill pan with water, add 1 tbsp dishwasher detergent and simmer for 15 minutes. Makes clean up a snap!
