Christina’s Unembellished Granola

adapted from Family Fun Magazine

I have a habit of eating all of one thing on my plate before moving on to the next. That is, I never mix flavors! So it is no surprise I want my granola…plain. This recipe could easily be enhanced by adding a handful of your favorite nuts before baking or dried fruit after baking.

I eat this for lunch almost every day…yum! (with the nuts and fruit on the side of course!)

4 cups old fashioned oats

1 cup wheat germ (I only use ½ cup…this ingredient adds a lot of calories without a lot of nutrition or taste)

¼ cup brown sugar

1 tsp cinnamon

¼ tsp salt

1/3 cup vegetable oil

1/3 cup water

1/3 cup honey

 

Heat oven to 300 degrees. In a large mixing bowl, stir together the oats, wheat germ, brown sugar, cinnamon and salt (add a handful of nuts here if you wish). Make a well in the center of the dry ingredients and add the oil, honey and water. Toss until combined.

Spread mixture evenly on a cookie sheet. Bake 40 minutes, stirring every 10 to keep from sticking. Let cool, stir in some dried fruit if desired. Store in an airtight container.

*Note…I make it even healthier by halving the brown sugar (to 2 Tbsp) and cutting oil and honey down to ¼ cup from 1/3 cup.
