Great Granola!

6 cups old fashioned oats

¼ cup sunflower seeds

½ cup flaxseed meal or wheat germ

1 tsp cinnamon

¼ tsp nutmeg

3 large egg whites

¾ tsp salt

¾ cup honey

1/3 cup olive oil

  1. Preheat oven to 350.
  2. Combine oats, seeds, wheat germ and spices in a large bowl.
  3. Whisk egg whites and salt until frothy. Add honey and olive oil.
  4. Add wet ingredients to dry, stir until evenly coated.
  5. Spread on a very large rimmed baking sheet (or 2 smaller ones). I line with foil and spray with Pam!
  6. Bake 20 minutes, stir and bake 10-20 more – depending on how crunchy you like it. I bake about 45-50 minutes total, until golden brown.
  7. Store in airtight container.
