Mexican Rice for 2 (servings) (double for 4-6 servings) 1 (15 oz) can tomatoes with green chilis (28 oz can)tomatoes* 1/4 cup plus 2 Tbsp white rice (3/4 cup) rice 1/2 cup water (1 cup ) water 1/2 tsp sugar (1 tsp) sugar 1/2 tsp chili powder (1 tsp) chili pwd black pepper black pepper Stir all ingredients together and bring to boil. Cover and simmer 20-25 minutes until water is absorbed. *can sub (2) 15 oz can tomatoes and (1) 4 oz can green chilis when making double batch |
