New England Maple Beans & Sausage

(Serves 6)

1 can (29 oz) pinto beans, rinsed

1 can (29 oz) baked beans (I like Bushes-any kind already flavored will do)

1 cup chopped onion

1/3 cup maple flavored pancake syrup

1 Tbsp dry mustard

8 oz turkey kielbasa, cut into 1/2 inch thick half rounds*

2 medium Golden Delicious apples, peeled and sliced

 

  1. Heat oven to 350 degrees
  2. Mix all ingredients in a shallow 3 or 4 quart casserole until well blended.
  3. Bake, uncovered, 55-60 minutes until apples are tender

Per serving…349 calories, 18 grams protein,. 15 grams fiber, 5 grams fat

*I substitute Morningstar Farms meatless breakfast "sausage" links for the turkey kielbasa
