Rice Salad

My favorite dinner on a hot summer evening!

Salad:

2 or 3 cups cooked brown rice (1 cup dry)

1 cup frozen peas, thawed

1 cup frozen corn, thawed

1/3 cup chopped onion

1 can black beans, drained

Dressing:

1/4 cup fresh lemon juice (juice of 1 lemon)

1/4 cup apple cider vinegar

2 tbsp. honey

1 clove minced garlic

1 tsp dried oregano

1 tsp dried basil

black pepper to taste

Combine salad ingredients in large bowl. Mix dressing in separate bowl and pour over rice. Mix well and chill for minimum of 15 minutes. Toss again before serving. Top with grated sharp cheddar cheese when serving.
