Banana Cake

From Quick & Healthy Volume 2 by Brenda Ponichtera. It is so tasty…perfect for breakfast or dessert.

1/2 white sugar

1/4 cup applesauce

2 eggs

1/4 skim milk

1 cup mashed bananas

3/4 cup unbleached flour

3/4 cup whole wheat flour

1/2 cup oat bran

2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp baking soda

1/4 tsp nutmeg

1/4 tsp salt.

1/2 cup mini chocolate chips (optional)

 

Heat oven to 350. Spray 8x8 pan with non-stick spray. In large mixing bowl, combinesuagr, applesauce, egg, milk and banana. In separate bowl, mix remaining ingredients Except chocolate chips. Add dry ingredients to wet. Stir just until flour is moistened. Fold in choc chips if using. Pour into pan and bake 50 -55 minutes or until toothpick inserted in center comes out clean.
