This sounds wacky…but they are very good. Slightly less fluffy than traditional cakes…but very tasty. Good for you too! I'm going to add blueberries next time I make them! Cottage Cheese Pancakes 3 eggs 1/4 tsp salt 1 cup lowfat cottage cheese 1/4 cup skim milk 1 cup all purpose flour 2 Tbsp sugar 1 tsp vanilla 3 tsp baking powder Combine first 4 ingredients in blender. Blend until smooth. Add remaining ingredients and blend again. Spray griddle with non-stick coating. Cook pancakes over medium heat until golden brown on both sides.
