Roasted Carrots 2 pounds carrots, peeled and chunked in 1 inch rounds (or use baby carrots) 2 onions, peeled and quartered (optional) 1-2 Tbsp olive oil Combine all in 9 x 13 glass dish. Cover and bake at 350 for 2 hours. Can increase temp to 425 for last 10-15 minutes baking time to increase carmelization and browning of carrots. |
