Roasted Honey Mustard Carrots

1 pound baby carrots

1 Tbsp vegetable or olive oil

2 Tbsp Honey

2 Tbsp water

1 Tbsp vinegar (any kind)

1 Tbsp Dijon style mustard

½ tsp salt

½ tsp freshly ground pepper

Preheat oven to 400 degrees. Place carrots in a wide shallow baking dish and sprinkle with oil. Stir or rub carrots with hands to ensure even coating.

Roast carrots for 20-25 minutes. Meanwhile stir together remaining ingredients. Remove carrots from oven and stir mustard sauce into them. Roast 10-15 minutes more, or until carrots are tender.
