Don't be intimidated by the long list of ingredients. It cooks up quickly once you've done all the prep. It is my favorite stir fry!

Spicy Stir Fry Chicken

2 chicken breasts, diced in bite sized pieces, marinated in the following:

Marinade

1egg white

1 tsp cornstarch

1 tsp salt

1 tsp soy sauce

black pepper

2 carrots, sliced

1 sweet onion, sliced thickly and quartered

1/2 red pepper, thinly sliced

4 cups frozen broccoli spears, thawed in microwave (or fresh!)

2 green onions, sliced

peanuts

1 tsp minced garlic

1 tbsp chopped ginger

Sauce:

1/2 cup broth

1 tbsp water

1 tbsp corn starch

1 envelope hot and spicy stir fry mix, prepared according to directions

Marinate chicken at least 30 minutes.

Cook Chicken, garlic and ginger in 1 Tbsp oil in non stick skillet.

Remove from skillet

Cook all carrots, onion and pepper for a few minutes - in 1 Tbsp oil. Add broccoli and green onion and stir fry a few minutes more. Add sauce and cook 1-2 minutes. Return chicken to skillet and heat through. Add peanuts. Serve over rice.
