Spinach Lasagne

A neighbor made this for me after Nathaniel was born. The yummiest stuff on earth!

12 lasagna noodles - cooked

36 oz. cottage cheese

1 lb. monterey Jack cheese - shredded

1 1/4 cup fresh parmesan cheese

3 eggs

1 Tbsp. parsley

1/4 Tbsp. garlic powder

1/8 tsp. white pepper

10 oz. frozen spinach - thawed and drained

 

Separate some monterrey jack cheese to use as topping. Combine cheeses,

eggs, parsley and spices - mix well. Mix in spinach last. Layer noodles

and cheese mixture (3 or 4 layers) in a greased 9x13 pan. Top with

remaining monterrey jack cheese. Bake uncovered for 1 hour at 350 degrees.
